 Brats, Fresh Salad w Vinaigrette & Roasted Onions & Potatoes

 Yes I am a we bit stir crazy with all the cold weather then the rain today. I am guilty of salivating over all the recipes my friends & family keep sharing on Facebook so I decided to make one today! The recipe I saw called for butter but I use Olive all the time instead of butter. These potatoes are easy & are yummy! I added Onions to mine half way through the cooking time but not everyone likes Onions though. Next time I will add carrots too I think. My 9 year old son said, "I love onions cooked like what is it called Maw, "incinerated?" I am like, "Um I have no idea what you are talking about!" Aaron says, "Oh no I mean caramelized -that's it!" I am still laughing my butt off! Oh how I love my children!!!

Herb Roasted Red Potatoes

8-10 med Red Potatoes
Olive Oil
Herbs & seasonings to taste

I used Olive Oil, Sea Salt, Rosemary, Garlic & Lemon pepper. Thinly slice potatoes but not all the way through. This is more difficult if you have had a third cup of coffee this morning which I did. Anyways after you slice them toss them in Olive Oil, Herbs & seasonings. Place them face up on a cookie sheet.
Bake 40 Mins on 450 degrees
